Our Story

A Japanese hibachi and sushi restaurant in Alpharetta, Georgia — and why where the food comes from matters more on a hibachi grill than almost anywhere else.

Two Kitchens, One Room

Ichiban Steak & Sushi is a Japanese hibachi and sushi restaurant located in Alpharetta, Georgia. Most nights, two very different kinds of cooking run side by side in the same dining room: a teppanyaki grill built for heat and spectacle, and a sushi bar built for stillness and precision.

They are opposites. The grill is loud, hot and fast, and the chef performs. The sushi bar is quiet and exact, and the work happens in the wrists. Guests often come for one and leave having discovered the other.

Where the Food Comes From

We source our products locally to support the local economy and other small business owners. All of our filet mignon, strip steak and ribeye cuts come from Georgia Hereford cattle and Georgia ranchers. Our salmon is sourced from Norway and Scotland, which we consider far superior to South American salmon.

Why sourcing matters more at a hibachi table

In a conventional restaurant, the kitchen is behind a wall. A steak arrives already cooked, already rested, already plated, and the diner judges the result without ever seeing the raw cut.

A hibachi grill removes that wall entirely. You watch the beef come out of the cooler. You see the marbling before it hits the plate. You see how it behaves under heat — whether it sears or steams, whether it renders clean or throws off water. Twenty minutes later you eat it. There is no stage of that process a kitchen could hide.

That transparency is the reason we buy the way we do. Georgia Hereford cattle from ranchers in this state give us beef we are willing to sear in front of a table of ten people who are watching closely.

The salmon

The cold-water salmon farmed in Norway and Scotland has a firmer texture and a higher, cleaner fat content than warm-water alternatives. On the sushi bar that fat is what carries flavor across the palate in a slice of sashimi. On the grill it is what keeps a fillet from drying out on a surface running well above what a home range can produce. It costs more. It behaves better in both kitchens.

What We Are Trying to Be

Alpharetta has plenty of places to eat well. What a hibachi table offers that a quiet dining room cannot is that dinner becomes an event without anyone having to plan one. Strangers seated together at the same grill end up talking. Children who cannot sit still for twenty minutes sit still for forty. Birthdays happen without a reservation for a private room.

That is the room we are trying to run — one where the food justifies the ticket on its own, and the evening is memorable on top of it.
