Cooking on a teppan is a performance job as much as a cooking job. You are managing several proteins at different temperatures on one surface while talking to a table of ten. We will train the showmanship; what we look for is heat control, steady knife work and comfort in front of guests.
Cutting to order at the bar, building the signature roll list, and holding the fish program to standard. Experience with nigiri and sashimi portioning expected.
Hibachi service has its own rhythm — timing soup and salad against the chef's arrival, seating parties together at one grill, and reading how much a table wants to be part of the show. Restaurant experience helps; the hibachi-specific parts we teach.
Ichiban Steak & Sushi is at 5306 Windward Parkway, Alpharetta, GA 30004, with free parking on site. The calmest time to come in and speak with a manager is mid-afternoon, between the lunch and dinner services.
