How to Read a Sushi Menu

If the list above is unfamiliar, the vocabulary is simpler than it looks.

Nigiri

A hand-pressed finger of seasoned rice with a slice of fish laid over it. It is the purest test of a sushi bar, because there is nothing to hide behind — just the fish, the rice and the temperature of both.

Sashimi

Fish alone, sliced and plated without rice. Order it when you want to taste the fish itself; order nigiri when you want the balance of fish and vinegared rice.

Maki and traditional rolls

Rice and filling rolled in nori seaweed. The California roll, spicy tuna roll and cucumber roll all belong to this family. These are the reliable starting point for a first-time sushi guest.

Signature rolls

House creations, usually larger, topped rather than plain, and finished with sauces such as spicy aioli, kabayaki or yuzu. Ours run from the Firecracker at $13 to the Optimus Prime at $26, which combines lobster tempura with seared steak. This is the section to explore once you already know what you like.

How fresh is the fish?

Fish is cut to order at the sushi bar rather than pre-sliced. Our salmon is sourced from Norway and Scotland.

What does the asterisk next to a roll mean?

An asterisk marks items that may be served raw or undercooked. Consuming raw or undercooked seafood may increase your risk of foodborne illness, especially if you have certain medical conditions.

What is the difference between nigiri and sashimi?

Nigiri is a slice of fish pressed onto a small bed of seasoned rice. Sashimi is the fish alone, without rice. On our menu nigiri is priced per 2 pieces and sashimi per 3 pieces.

Do you have low-carb or no-rice sushi options?

Yes. The Hunger Games roll and the Hawaiian roll are both wrapped in cucumber instead of rice.
